Hola!
When did you learn to play guitar? is the best. Or you can say,
When did you start to learn to play the guitar?
I started learning about a month ago.
You only use 'months' if it's two months or more. Never say 'one months'.

¡Muchas gracias! Y ¿sería correcto decir 'I learned to play guitar last year'? O también debo usar el verbo 'start'? 🥺
- English (US)
I would say "I started to learn to play last year", because you don't really ever stop learning to play, right? You could also say "I've been learning to play since last year"!
