Hoi is colloquial. Goeiedag is the standard formula, which can be abbreviated in “Dag”, more often pronounced with a double a (da-ag). Hoi is more colloquial language, typically used by younger people.

We can also use 'dag' to say goodbye. It's the only greeting (that I can think of) that we can use as a goodbye.
