It means that by boiling the liquid, some of it will evaporate (as steam) so there will be less liquid than what you started off with.
The sentence sounds good, I would just change it to "What does "boils off" in "until some of the liquid boils off" mean?" I changed "for" to "in" because the phrase"boils off" is "in" the sentence of the second part.
