If you use "がga" as a particle, "Sushi" becomes the subject.
寿司を食べます。is OK.
I eat Sushi.

In Japanese language, が doesn't indicate the subject in the sense of European languages.
~が、 indicates the main thing or main theme of the sentence.
Sometimes it works as subjects, sometimes it works as objects.
（私は）寿司が食べたいです。
can be said also, ( instead of が、using を.）
（私は）寿司を食べたいです。
I want to eat Sushi.
But if you want to emphasize Sushi、then
（私は）寿司が食べたいです。
(It is Sushi that I want to eat) It means " I don't want anything else!"
When you use auxiliary verbs like
~たい、したい =want to (do~)
the subject is automatically , I or You.
Then in Japanese language the subject can be omitted.
But 寿司が食べる without any context , it means literally
Sushi eats (someone or something).
