The countable demand is a noun. It is something you are directed to do.
The uncountable demand is a verb. It means to tell someone to do something.

I have looked up this word in many dictionaries and it says that it can play in both roles as a UNCOUNTABLE and COUNTABLE noun I am rather confused about which one to choose

The first sentence is correct. In this sentence, demand is uncountable.
