The meaning is exactly the same, but be careful with the grammar for 'curious':
"I've been curious about what it tastes like." or "I've been curious as to what it tastes like."
"I've been wondering what it tastes like." is the more natural way to say this.

@Joe188 In normal, fast speech we will often omit the word 'about', so you will hear "I've been curious what it tastes like.". But this isn't grammatically correct, we need something after 'curious'. The most common thing you will hear is 'about' - "I'm curious about something.". When we talk quickly, we're often not grammatical!

They mean the same thing. If someone wanted to know what the berries and cream churros in Disneyland taste like they would either say I’ve been curious on what it would taste like or I’ve been wondering what it tastes like shows their anticipation and curiosity of whether it is good or bad.
