Originally, both words are considered masculine, and they use the masculine form even when refering to a feminine subject. However, ideologies change and so does the language. That is why, in recent years, it's nomore impossible to encounter feminine marks used with those words such as an additional "e" and a feminine determinant :

un professeur / une professeure
un médecin / une médecin

However, regarding the rules, we would have to say : un professeur and un médecin, no matter if the title refers to a male or a female.
