How do you say this in Russian? - “I’m hungry” And “I said I’m hungry” (in response to “what?” Or “what did you say?”

Is it Я голоден, and Я сказал что я голоден?

And what is the difference between Я голоден and Я хочу есть?

My boyfriend is Russian, and I want to be able to pull out random phrases, but he’s a native speaker and I don’t want to embarrass myself using the wrong words :)

"Я голоден" is grammatically correct, but Russians don't say that.

Female is я голодна, я голодная.
But @Atoma is right, we use to say "я хочу есть".
If you want to emphasize your hungry, you can say "я ужасно голодная! / я так хочу есть!"

"Я голоден" (or "Я голодный") - I'm hungry
"Я хочу есть" - I wanna eat
There is no essential difference between the 2 ways to say. You can use both

Есть хочется. - что? - говорю, есть хочется!
Я хочу есть. - что? - хочу есть, говорю!
These are very colloquial and native-like. говорю should be pronounced with a low intonation, a bit like an afterthought. The repeated part should be a bit higher than normal.
