Ich glaube, das ist Lebkuchen, sondern nicht Liebkuchen. und weich statt sanft.

Lebkuchen can be weich or get hart, when you bake it too long. But there are also different types some are softer, some are harder. Also it get hard with time, because of drying out. I don't exactly understand what sentence you tried form.
