In the recording, why she said "it's" cost-effective? Why not said "is" cost effective?:
"Another benefit is cost-effective."
I think using "is" is right, and "it's" is wrong.
...with seeds, it seems quite possible that we'll be able to supply vaccines to places that need them, where as before, transporting and preserving these products over long distances simply wasn't feasible. And another major benefit of extracting plant proteins for medical use, 【it's】 cost-effective. Unlike the production of proteins for medicinal purposes using yeasts, extracting proteins from seeds doesn't require high-tech production labs.

She was just speaking colloquially; that’s why she has said “it’s” rather than “is”. If you were to write this, you could use a dash:
“Another major benefit of extracting proteins for medical use - it’s cost-effective.”
This would help prevent the confusion, but not necessarily what I would have done. I’d say:
“Another major benefit of extracting plant proteins for medical use is that it’s cost-effective”
