First one is correct
Much is used to describe mass nouns or noncount nouns like juice, rice, patience, and happiness. When using much, the noun will always be singular; it cannot be plural. Many is used to describe count nouns or nouns that can be counted like books, ideas, leaves, and shoes. - Britannica

Not 100% sure but I think because 'more' can only describe the quantity so it can't be used with higher

More is used with adjectives that do not have 'er'
Interestinger is not correct but can use more interesting
Redder is not correct but more red is.
High can become higher. More High can be correct but is unnatural
