The second sentence is wrong.
"a pour caractéristique <le froid>" = "se caractérise par <le froid>"

La 2ème phrase n'est pas correcte.
La 1ère phrase est correcte.
"Le poison a pour caractéristique le froid" c'est comme écrire,
"Le poison possède la caractéristique d'être froid". C'est une autre manière de dire les choses.
"a pour" permet de renforcer l'idée d'un attribut présent dans un corps.
