He’s on the night shift. (Ask yourself: which shift is he on? the night shift, where night is an adjective modifying shift)
He’s on night duty. (You can’t really ask yourself here Which duty is he on? as you can with the other one. That doesn’t make sense).
Just my take on this. I could be wrong 😂
