If a bad experience doesn't kill you, then you are still alive and can benefit from the knowledge or lesson that you learned from the experience. That knowledge can make you stronger in the future.

If something is very difficult, you become more experienced in knowing how to deal with that thing. Therefore, you become "stronger", or more knowledgeable or skilled.
but if it killed you, then you can't become stronger, because you are dead now! So that's why it says "what DOESN'T kill you"
Jimmy: I've been trying to eat more spicy foods. If I keep eating spicy food, I'll become more tolerant of it. What doesn't kill me makes me stronger!
