@octopusperson if you are talking about the difference between "pastry chef" and "pĆ¢tissier", they are basically the same.
PĆ¢tissier is a french word so using pĆ¢tissier instead of pastry chef may put the accent on someone who has particular skills in preparing french pastries.
The usage of a french word may be used to bring a sense of exclusive, high level expertise.
