Question about English (US)

I know you can distinguish between the pronunciations of " vat " and " that ". I can pronounce these two words correctly but I can't find the difference when I listen to it. So show me the difference between them when you hear it, please!
For example, if you asked me what is the difference between the "s" in see and the "sh" in she , I would say the sh sound creates more air and sounds softer than the s sound.
