It's really difficult in English to have a conversation about someone without knowing the gender of who you're talking about.
You can use the singular "they/them" eventually, but it's a bit awkward, because out of context it would sound like you're playing with several persons.
- You play tennis with them.
In a normal conversation, you'd get plenty of hints about the gender of the other person, because people use pronouns or gendered first names. In case the first name is ambiguous (could apply to a man or woman), you could use "he" and your interlocutor would correct you and so the issue would be quickly settled.
- I'm going to see Avery next week
- Are you playing tennis with him?
- Her, but yes, we're going to play tennis.
