they are asking what your plan is for the rest of the holiday.
the sentence they’re asking is really “ARE you doing anything over the holiday?”, which is asking about the future.

I think, they're using "holiday" the way we do in the US. What are you doing OVER THE HOLIDAYS (usually plural), refers to Thanksgiving.. christmas.. new years. Actual holidays.
they might just be asking about ONE holiday. such as, "what are you doing for Christmas?". some might say... "for the Holiday?"
we use the word VACATION when talking about time off from work. we don't say we're taking a holiday.
'What are you doing on your vacation?" is common / normal to say.
