Any English speaker could understand what you are trying to say, but the structure of the sentence sounds unnatural.
Here is some other ways you could say this:
"I want to do that"
"I would like to do that"
"I wish I could do that"

@magasum since “so much” is an adverbial phrase (multiple words that act as an adverb) we prefer to put it on the end of a sentence, rather than before a verb. You could however say “I really want to do that” which would have pretty much the same meaning
