What are the qualities or characteristics that differentiates them from regular potatoes?
An items characteristics identifies it (makes it). Color, size, smell, taste, texture, etc. All f these things make something what it is. How can you tell one thing from another. By comparing the qualities of which it is made.
One potato is created (made) with a green skin, another is created (made) with a brown skin.
One potato is created (made) with small and round, another is created (made) large and oval.

@Kei_English1212 Yes. Things, like potatoes, are made of things like color, taste, shape. If I say, "Make this dough into a ball", it becomes a ball. If I say, "Now make this dough into a flat sheet", it becomes a flat sheet. But they are both dough. So how can I tell one thing of dough from another thing of dough? I can tell by how they are made. Their shape makes them different. One is made into a ball and the other is made into a flat sheet. If someone asks, "What makes this piece of dough different from that one?", you answer, "Their shapes make them different".
So what makes these potatoes different from those potatoes? Is it their size, their color, their taste? What makes them different? If nothing makes them different, they are the same.
