No, neither of these sentences are correct. They should be:
She is *as* skinny as me.

@gs1203 “Much” can be used with “more”, but “more” cannot come before an adjective that’s already in its comparative form. “Smarter” is already comparative. “More smarter” is incorrect grammar. If you want to use “much” and “more” together, then you need an adjective that goes with “more” instead of “-er”. For example:
She is much more beautiful than Sarah.

@gs1203 No, it’s the same as your first question. You need the first “as” there. Also, “soldiers” should either be singular or have “the” before it.
He is as brave as a soldier.
He’s as brave as the soldiers.
