Do you by any chance know why the second one is correct and if there's a rule?
The reason I don't understand is because the subject of the sentence is "number" and it's a singular noun.

I'm not a teacher but answered 'the second one' as it sounded more natural to me.
However, I read that:
wants rather than want is only used for the third person singular (he/she/it). You can simplify the sentence by replacing "an increasing number of people" with "they" which is the third person plural.
Example with 'go'
