'gente': (singular) group of people, usually a lot of them (人々のグループ、通常は多くの人々) a little less formal than "personas".
'personas': (plural) more than one person, not specific about how many of them, just more than one (一人以上の人。話している人の数には関係ありません。単純に複数の).
'persona': (singular) just one (単純に1つ)
Nota: 'gente' no es el plural, sino el colectivo (*) de 'persona', el plural de 'persona' es 'personas'. Además, 'gente' es incontable.
(*) Colectivo: Sustantivo que, en singular, denota un grupo de algo, por ejemplo: gente (colectivo de 'persona').
