“not sold on something” can be used when there is something about the thing or idea you are not sure about yet.
“does not sit right/well” involves a feeling that something isn’t right about the thing or idea.
For example, when looking at a house to buy, you can say:
“I like this house, but I’m not sold on the kitchen”
This can mean, you don’t like the kitchen or you aren’t sure it will function well for your daily life.
“I like this house, but something doesn’t sit right with this kitchen”
This can mean, the kitchen looks ok, but you feel there is something wrong with it, but you aren’t quite sure.
