“ I will pick you up” means that I will come in my car and give you a ride to wherever we will go together.
A person without a car can say “I need a ride”, meaning that he needs a way to get somewhere. You can say “ I will pick you up” meaning that you will come with your car.
“To pick somebody up “ can also mean to make them feel better. When a friend says just the right thing to make you feel better you can say “ you always pick me up” which means “ you always make me feel better”.
