What is the difference between 叔父さん and 爺さん ?Feel free to just provide example sentences.

叔父さん＝your parents’ young brothers, it’s not relevant to the age!
By the way,
伯父さん(おじさん)＝your parents’s elder brothers
And おじさん(ひらがな)often means Middle age men

爺さん、お爺さん＝your parents’s father( grandpa)
Or a generic term of old men

So, 祖父 and 爺 both can mean grandfather, but for an old man I can just use 爺 (じじ, じい.さん)?

自分の祖父でも、出来るだけ　おじいさん、おじいちゃん、じいちゃん、です。
幼い子供だと　じいじ　と呼んだりもします。

In that case, you should say “sofu” 祖父(そふ), of course, it’s not rude “おじいさん or おじいちゃん” , but adults usually say sofu.
