@joe1888 the first one uses the word "have" which is necessary in this sentence. It doesn't make sense without it because what you are hoping is that they *experience* a merry Christmas. That's what the "have" implies. Without it you are missing the thing you are hoping for them.
I don't think I explained that well, sorry! lol

@joe1888 The first one is correct.
To correct the second one, you could say:
I wish you a merry Christmas!
or
I'm hoping you have a merry Christmas!
or it is also very common to leave out all the other words and just say Merry Christmas!

@trishabdodd can you explain to me why “I which you a merry Christmas” makes sense even though it skipped the “have”

@joe1888 Hope and wish have similar meanings, but you can't just use one in place of the other. Here are some examples of how they'd be used:
I hope you get the new job!
I wish you luck in getting the new job!
I wish you didn't do that.
I hope you don't do that.
I wish I could get a new car.
I hope I get a new car.
I hope that works.
I wish that would work.
This might help explain it:

@trishabdodd can’t I use them in the same sentences for example “ I wish I could get a new car” I hope I could get a new car”
