They all work. They have different meanings. 1 means you are talking about an action that is ongoing - you are still shopping. 2 means you are talking about an action that was ongoing - you sound like you are starting a story here (“I was going shopping and this happened…”). 3 means you are talking about a completed action.

3 is good. It's not natural or necessary to use extra words, like in 1 and 2. (I have been going or I was going). The only thing I'd change with 3 is this. "Today I went shopping for my son's birthday, which is tomorrow."
