I left (my country, home, Japan etc.) for America.
… the point of the sentence is that you “left somewhere”.
I started (my journey, trip, etc.) for America.
… the point is that “you started your journey or trip”.

These are interchangeable. In my opinion. I think "started for" is less common in America and more colloquial.
