are you cooking for someone else? if so, #1 is fine.
if not, you can say: I have to EAT earlier today, b/c i need to finish... .
#2: I would say "I have to HAVE breakfast earlier than usual today". Not: 'make my breakfast'.
For eating / having meals we tend to use HAVE more than "cook".
or you can say I have to GET breakfast (assuming you're buying it somewhere) earlier today...
