so the main difference is the manner of when you use it, however the use will mostly be the same.
I will be starting to enjoyed, however, is wrong. The right phrase would be “I will be starting to enjoy”.
And when you use these two things is like this:
I will be starting to enjoy would mean that you would start to enjoy in the future and it would be sure that you would enjoy.
If you add the word eventually, you would be saying that you would enjoy soon, but you are not sure when.

I think you may mean “perhaps” or “maybe” instead of “eventually”.
