1. Разница в том, что второе словосочетание записано неверно.
Правильно: "Спасибо, мама".
Пунктуация в русских предложениях очень важна. Например: "Казнить нельзя помиловать" - к какому глаголу (verb) в этом предложении относится "нельзя", к "казнить" или к "помиловать"? Все зависит от запятой (comma) (которая пропущена), в устной речи - от интонации.
Пунктуация (знаки препинания, punctuation marks) в тексте - это та интонация, с которой произносится предложение. Следовательно, пунктуация - это и смысловые акценты (accents of sense).
2. "Спасибо маме." - предложение в повелительном наклонении (imperariv): " (Скажите вы - implicit predicate and subject) Спасибо маме (мама in dative) (за что-то (for something) - implicit object).
