I can say the man in blue or the man in black to talk about a specific person, can I do the same but not with colors for instance can I say the man in long beard or the woman in high heels?

so I understand that if it's a part of a body I can use "with" like the man with long beard, and if it is not a part of a body I can use "in" like the man in glasses?
