As with any language, there's more than one way to say something. However, your second sentence is incorrect.

He lived with my grandparents WHEN HE WAS a child.
> AS an adult, I have more responsibilities. = NOW THAT I'M an adult, I have more responsibilities.
> I wasn't paid much AS an entry-level employee. = I wasn't paid much WHEN I WAS an entry-level employee.
