"Resign" is more specific than "quit." To quit is to stop doing something, but resigning is quitting a job or other official title. Examples:
"He resigned from his position as head of the committee."
"He quit working on the committee."
"I quit playing the violin when I was 12." (you can't resign from playing the violin)
