So what is the respective part of speech of 'hair' 'cut' in this case?

I'm = subject
getting = verb
my hair = object of the verb
cut = past participle of the verb "to cut"

This is used when you have someone do something for you.

Subject + verb to have + the object + the past participle

I had my wallet stolen. This means someone stole my wallet.
We are having our apartment redecorated. This means someone is redecorating our apartment according to our wishes
