but if you say: ich brauche das papier / das blatt / das blatt papier holen, is correct?

another doubt: blatt is the same that sheet and leaf?

you can't combine "brauchen" with another verb. it's not a modal verb like the english "to need to"
you can say: Ich brauche das Blatt Papier. Deshalb muss ich es holen.
i'd say "Papier" is the material, Blatt is the "form" ("large and very thin area" ...more or less) (there are several kinds of Blatt - e. g. Blatt Papier, 🍁🍂🍃, Sägeblatt ( blade (?) of a sew 🪚)...)
so we use all three versions: Papier, Blatt Papier, Blatt ("Blatt" makes it coutable)
Ich muss Papier in den Drucker legen.
Ich muss die Blätter, die ich ausgedruckt habe, aus dem Drucker holen.
Gib mir bitte ein Blatt blaues Papier / vier Blätter von dem roten Papier.
