"Even Mike does but he's a vegetarian" doesn't make sense here.
You'd use "but" to add the context for an exception that we would expect to have. For example:
Everyone I know likes the smell of bacon -- well, Jessica doesn't, but that's because she has a pet pig.
However, Mike is not an exception. He likes the smell, even though someone may think a vegetarian would not like it. "And" adds the context that we need to know why it's unexpected.
