yes it doesnt really make sense, nobody says anything else other than "so" in this sentence.
You can use "that" in a sentence like "I can't speak French that well"

Google says that "this" and "that", as an adverb, follow another adverb or an adjective. The reason i dont know is that in my school, we never learnt it or i just dont remember learning it. I think i just got used to how it was structured in many different sentences and found the pattern between them and applied them to other similar sentences. By looking at many different types of structured sentences all with a particular adverb, then you can compare the similarities between them to find out the pattern.
Sorry i couldnt help more on this, it was just very long ago that i learnt this.
To be honest, if i were to read a sentence with an adverb, i wouldnt even recognise it because i dont really remember what an adverb is and where it is placed in a sentence. 😬

@LynnO That’s fine. So you just think “why do you speak French this well” sounds unnatural to your ears, right? Even though the sentence itself is grammatical.

"so", but in general "how" is more common. "How do you speak French so well?"
