Is it “sun go down” or “sun goes down”?
I’ve noticed in some of songs lyrics, the writer often use “go” instead of “goes.
Or,can we use both of it on some specific terms and conditions?

“The sun goes down each evening”

@Jules-Atlanta can we use both of go and goes interchangeably? For instance, can I say “The sun go down in the evening” and “the sun goes down”.

No. They are not interchangeable. “The sun goes down in the evening” is correct.

@Jules-Atlanta I’ve also noticed that on some lyrics, the writer wrote “it dont matter where and it dont matter when”

@danubratabobby you are right that it should be “doesn’t.” But it’s not uncommon for people to use incorrect grammar in casual language, and especially in song lyrics.
It’s normal to hear “he don’t know,” even if it’s incorrect. I would encourage you to know the difference, and use the correct form as often as you can. But you’ll at least know what people mean, even when they get it wrong.
