I won’t be eating = I won’t eat
I won’t be going = I won’t go
I won’t be running = I won’t run
I won’t be walking = I won’t walk

Try to use it in a sentence, and replace the other term, and see if it means the same!

I won't be eating lunch today. = I won't eat lunch today.
Both statements are saying the person will not eat lunch today.
