I had a wonderful time.
vs
I had such a wonderful time!
We hiked up the mountains. When we got to the top, it was a wonderful view.
vs
Oh, it was a rough hike. But it was worth it. At the top, it was so wonderful a view!
Basically, the second sentence sounds more enthusiastic, and is expressing more admiration. It sounds a little out-dated, like something you would see in an old movie, or perhaps from a diary. So the differences are also contextual! Hope this helps
