What is the difference between asseoir, j'assieds, vous avez assis, etc. etc. and s'asseoir, je m'assieds, vous vous êtes assis, etc. etc. ?Feel free to just provide example sentences.

Le verbe le plus courant est le verbe pronominal : "s'asseoir".
C'est un verbe trés irrégulier :-(.
Au présent : Je m'assieds (je me mets en position assise), nous nous asseyons,...
Au passé, on n'utilise presque que le passé composé ( à cause de la complexité du verbe), donc : je me suis assis, nous nous sommes assis.
Enfin, pour indiquer la situation (le fait d'être assis), et non plus le mouvement de s'asseoir :
présent : je suis assis, nous sommes assis
passé : j'étais assis, nous étions assis
