I never understood the whole countable/uncountable thing. I never knew about it till I started on this site.
But as to your question, you can say "skill" in singular or "skills" in plural.
"Her skill in piano playing is exceptional."
"It takes various skills to play baseball well."
Not sure this is the correct anwer to your question though. I am uncertain sometimes......

countable
for example the following are times where I count "skill"
"I have one skill I'm good at." or "To write a good paper you need three important skills, (list out the skills)"
