This is called a "dash". Hyphens are the same symbol, but they join words together. (Same symbol, but the name changes depending on how it is being used.)
We use dashes when we want to break up ideas in a sentence.
We also use them in poetry as a cue for the reader to pause before saying the next words as well as breaking up separate ideas. Is this from a poem?
