The stock prices in Japan have been rising for the last 18 months and don't seem to level off soon. The idea of investing all my savings on a start-up IT company crossed my mind. Somehow, however, I stopped myself remembering what happened during the 2008 financial crisis. Does this sound natural?

A little unnatural
"And don't seem to level off soon" is the only wrong part of this entry.

There are many ways to say it. In general though, you'd want to use "-ing" for whatever verb you choose. For example "and they have no sign of stopping."

"The stock prices in Japan have been rising for the last 18 months and are not showing any sign of leveling off yet."
