Tell them what you are doing for example 'I'm going shopping' :)

You should respond with an activity that you have done or want to do that day.
For example:
I've been swimming today
I've gone for a walk
I've been relaxing in bed
I am going swimming later
I am going for a walk later
I am going to relax in bed later

So the usual response to that question would be "Nothing much" meaning that you're not doing a lot that day.
You could also reply by saying what you are doing at that moment or something you are planning to do later, for example:
"I'm doing homework now."
"I'll be cleaning the house today."
"I'm going out to see my friends."
You can start off by saying "Well" before your reply, for example:
"Well I'm going out with my friends later."

@Ri-na This is usually small talk, it's just an invitation to chat so you can say anything you want about today. They don't usually want to know exactly what you'll be doing.
