I think the difference between "I'm going to do" and "I will do" it's: "I will do" it's something like: "I'm not sure if I do this or not". And "I'm going to do" it's more precisely that you going to do something.

"I am going to do" = might not happen. it is a possibility.
example: I am going to work out today.. there is a chance it might not happen.
"I will do" = It will happen.
but in normal English conversation i don't think anyone cares which one you use in case you get them confused.
