¿Alguien me puede ayudar a traducir esto?
- It's crazy how important casting is (for movies). I mean, that goes without saying, but seriously.
Mi suposición sería algo como "Es una locura lo importante que es el casting. Digo, eso es obvio, pero en serio."
My main problem is "that goes without saying" since that sounds slightly more polite than saying "that's obvious" or "obviously" in English.

Para que suene natural yo diría:
No hace falta decirlo pero, es una locura lo importante que es el casting!
"No hace falta decirlo pero, que importante es el casting! es una locura!" o algo por el estilo.

It basically sounds the same to me. The "that goes without saying" part is an expression which usually do not translate well. A literal translation would be " Es loco que tan importante el casting es, que diga, eso va sin decir pero pues enserio.

The way you translated it places emphasis on the "that goes without saying" part which isn't what the original sentence was aiming for.
