Do Japanese remember all the kanji? sometimes when I write in Japanese I have to stop and try to remember how to write the kanji for some words. 😂

not all, but almost all of Japanese adults dont have trouble writing/reading kanjis in daliy life I think.

not even Chinese can remember every Chinese characters/kanji cuz the amount is way TOOOOO enormous,relax lol

Kanji in writing slips my mind all the time. On the other hand, I sometimes take a wild guess in reading.
For example, the question I answered this morning, "「彷徨い揺蕩う はどういう意味ですか?」".
I could read "さまよい" instantly. "たゆとう" was an idiom/熟語 that I saw for the first time in my life but imagined it with the hunch/勘, and somehow or other that was right.
Thus as you get used to kanji, you will be able to imagine how to read kanji that you see for the first time.
